What is UHT?

While pasteurization conditions effectively eliminate potential pathogenic microorganisms, it is not sufficient to inactivate the thermoresistant spores in milk. The term sterilization refers to the complete elimination of all microorganisms. The food industry uses the more realistic term "commercial sterilization"; a product is not necessarily free of all microorganisms, but those that survive the sterilization process are unlikely to grow during storage and cause product spoilage. Milk can be made commercially sterile by subjecting it to temperatures in excess of 100ー C, and packaging it in air-tight containers. The milk may be packaged either before or after sterilization. The basis of UHT, or ultra-high temperature, is the sterilization of food before packaging.

    Advantages of UHT

High quality: The reduction in process time due to higher temperature (UHTST) and the minimal come-up and cool-down time leads to a higher quality product.
Long shelf life: Greater than 6 months, without refrigeration, can be expected

How long does UHT keep fresh

UHT milk will keep unopened for months without refrigeration. Store in a refrigerator below 4°C after opening, this product will keep for 7 days.

Why is Calcium so important?

Apart from giving strength to your bones, calcium is necessary for many body functions. Practically every cell in your body, including those in your heart, nerves and muscles, relies on calcium to function properly.

In order for your body to function properly, the level of calcium in the blood must stay relatively constant. You need to consume enough calcium throughout the day - otherwise, your blood will "steal" calcium from your bones to maintain the level it requires. When your diet is rich in calcium, you make "deposits" in your calcium "bank". Over time, if your withdrawals exceed your deposits, your bones can begin to weaken and become more susceptible to breaking.

One in four women will suffer from osteoporosis
Osteoporosis is a condition characterized by calcium-depleted bones that are so porous and fragile they can easily break - even a simple hug can fracture the bone of someone afflicted with osteoporosis. As we age, we all lose some bone mass. If you start off with bigger and denser bones and if you lose less bone mass as you get older, you will have more left in later years.

What is Half Cream?

The ideal coffee creamer.
Half cream or "half and half" is a mixture of whole milk and cream. It is an ideal coffee creamer which is fresher and creamier than powdered coffee creamers.  It can also be used in place of whipping cream or all purpose cream for less fat cooking. It can be used in the preparation of sauces, salads, desserts and general catering.

The Benefits of Lactose Free Milk

What is lactose?

Lactose is the main type of sugar in milk and is found in all milk products. In the small bowel a specific enzyme is used to break lactose down, so it can be absorbed into the body.

Many people do not have enough of the enzyme that breaks down lactose, so the lactose can't be absorbed. The unabsorbed lactose then moves into the large bowel where it causes discomfort. The most common symptoms are: bloating, stomach pain, cramps, wind, nausea and diarrhoea.

Who are Lactose Intolerant?

It is estimated that 90% of Asians are lactose intolerant. The inability to digest lactose can develop at any stage of life. It can also occur temporarily after a small bowel infection or surgery. If you experience discomfort after having milk or milk products you may be unable to digest lactose.

Is Lactose Intolerance a disease?

No, Lactose Intolerance is not a disease. But rather heredetary.

Can people who can't digest lactose drink milk?

Yes. Harvey Fresh Lactose Free Milk is specially made for lactose intolerant people.  The lactose in Harvey Fresh Lactose Free Milk is already broken down so it can easily be absorbed. What’s the difference between fruit juice and fruit drinks?

Fruit juice is 100% pure fruit juice, while fruit drinks, juice drinks, or fruit sodas only contains 5% fruit juice and the rest is water, sugar, color and flavorings.

What is reconstituted?

Fruits are squeezed using machines much like that found in the home. This juice is then 'condensed' by removal of water using heat. The resultant concentrate is transported to factories around Australia where the water is added back to the concentrate. This process is called reconstitution. The primary reason for using reconstituted juice is economic transportation and to ensure availability all year round.

What Does “No Added Sugar” Mean?

No added sugar - products must not contain any added sugar (includes honey, malt, malt extract or maltose) but, of course, still contain the natural sugars of the fruit juice.

Why doesn't freshly squeezed juice taste like what comes out of the bottle?

Most juices on the market are made from concentrate which does not have the 'fresh aroma' due to the heat treatment.
There are some products on the market which are made only from juice which has not been concentrated. These juices do taste more like the 'home made' product.

What is 100% Juice?

100% juice is the liquid obtained from fruits or vegetables. It does not include juice derived from concentrate or contains any additives whatsoever.

What is Natural?

Does not contain food additives (unless they are natural components) or have any part removed or changed.

Does reconstituted juice have any added sugar?

Definitely not.  Juice is transported around Australia and indeed the world in a concentrated form (two thirds of the water has been removed).  The reason for this is that it is expensive to transport this extra volume.  The water is extracted by evaporation, but the juice retains all its nutritional characteristics except for the fact that it loses some of its Vitamin C.  Reconstituted juice is simply this concentrated juice with the same amount of water added back as was originally evaporated off.  You would have noticed in the ingredient labelling of most brands containing reconstituted juice that the company has added Vitamin C to more than compensate for that lost during the evaporation process.   No sugar is added or removed during the concentration process.

What Does it Mean When Juice Is Not From Concentrate?

"Concentrate" refers to a process where the water is removed from juice to create a more solid and "concentrated" amount of flavor, which is then frozen so it will keep longer. For instance, if you buy OJ in a tube in the freezer section, you are buying orange juice concentrate. Then at home, you add water back into it.

Olive Oils

Why use Olive Oil ?

Olive Oil’s health benefits are due to both its high content of monounsaturated fatty acids and its high content of antioxidative substances. Studies have shown that olive oil offers protection against heart disease by controlling LDL ("bad") cholesterol levels while raising HDL (the "good" cholesterol) levels. (1-3) No other naturally produced oil has as large an amount of monounsaturated as olive oil -mainly oleic acid.

Olive oil is very well tolerated by the stomach. In fact, olive oil's protective function has a beneficial effect on ulcers and gastritis. Olive oil activates the secretion of bile and pancreatic hormones much more naturally than prescribed drugs. Consequently, it lowers the incidence of gallstone formation.

What are the different types of Olive Oil?

Generally, olive oil is extracted by pressing or crushing olives. Olive oil comes in different varieties, depending on the amount of processing involved. Varieties include:
Extra virgin - considered the best, least processed, comprising the oil from the first pressing of the olives.
Virgin - from the second pressing.
Pure - undergoes some processing, such as filtering and refining.
Extra light - undergoes considerable processing and only retains a very mild olive flavour.
Pomace - is the oil obtained from "olive pomace" by extraction by means of solvents and made edible by means of refining methods which do not lead to alteration in the initial glyceridic structure."

When buying olive oil you will want to obtain a high quality EXTRA VIRGIN oil. The oil that comes from the first "pressing" of the olive, is extracted without using heat (a cold press) or chemicals, and has no "off" flavors is awarded "extra virgin" status. The less the olive oil is handled, the closer to its natural state, the better the oil.
